4th o'July Pad Thai

Just shy of a month since the 4th of July, some of us are still salivating over the memory of the delectable dishes shared during our Declaration Day Potluck and Cookout.  For this month's Tried and True recipe, we feature one of those delicious potluck contributions - Member-Owner Dr. Sherrie Lyon's Pad Thai.

You may remember from our Dream Team Drawing Fundraiser at the beginning of this year that Sherrie (MO#619) is a passionate. talented, and generous cook, with a particular love for Asian cuisine.  After hosting a wonderful 6-course Chinese Lunar New Year Dinner on February 1, for July 4th she shifted to a classic Thai dish. 
 

Ingredients

  • 8 ounces dried Thai rice sticks (about 1/8 to 1/4 inch wide)

  • 10 pitted dates (about 2 ounces)

  • 5 tablespoons fish sauce (nam pla)*

  • 1/4 cup fresh lime juice

  • 1 large egg

  • 1 large egg white

  • 1 tablespoon vegetable oil

  • 1 tablespoon minced garlic

  • 2 skinless boneless chicken breast halves, cut into 1/2-inch pieces

  • 1 tablespoon garlic chili sauce*

  • 1 cup chopped green onions

  • 1/2 cup chopped fresh cilantro

  • 2 tablespoons finely chopped unsalted dry-roasted peanuts**

* Available at Asian markets and in the Asian section of many supermarkets. 
**Sherrie chooses to use cashews instead - they certainly were delicious! 
 

Instructions

  1. Noodles. Place noodles in large bowl. Add enough hot water to cover. Let stand until noodles are pliable but not quite tender, about 20 minutes.  Drain. 

  2. Date Mixture. Blend pitted dates, fish sauce, and lime juice in food processor until smooth.

  3. Egg Prep. Whisk egg and egg white in small bowl to blend. 

  4. Cook. Heat oil in large nonstick skillet over medium heat. Add garlic and stir 10 seconds. Add chicken; stir just until cooked or about 2 minutes. Mix in garlic chili sauce. 

  5. Add Eggs. Pour egg mixture over chicken; cook without stirring just until eggs are set, about 1 minute.

  6. Add Noodles. Add drained noodles; toss until heated through and egg pancake breaks up, about 3 minutes.

  7. Combine all. Add date mixture, green onions and cilantro; stir 1 minute

  8. Enjoy! Transfer to bowl. Sprinkle with peanuts, and share!
